Crock Pot Adventures~Cream Cheese Chicken with Broccoli

These last couple of months, I have been really big using my crock pot.
Thanks to the Medrano's for giving us this new Crock Pot Cook book! =)

This Cook Book is amazing, it has recipes for everything including desserts!!
I thought I would share one of my new recipes that I'm trying out tonight. It looks really yummy!

Its call Cream Cheese Chicken with Broccoli

The ingredients are:

Not Pictured is the chicken breast because it was already chopped up in the Crock Pot

4lbs boneless skinles Chicken Breast, cut into 1/2 inch pieces
1 tablespoon Olive Oil
1 package (1 ounce) Italian salad Dressing Mix
2 cups Sliced Mushroom (optional)
1 cup Chopped Onion
1 can (10 3/4 ounces) Cream of Chicken Soup, undiluted
1 bag Frozen Broccoli Florets, thawd
1 package (8 ounces) Low Fat Crean Cheese
1/4 cup Dry Sherry
Hot Cooked Pasta

Instructions:
1. Toss chicken with olive oil. Sprinkle with Italian Salad Dressing mix. Place in Crock-Pot slow cooker. Cover; cook on LOW for 3 hours.
2. Coat large skillet with nonstick cooking spray. Add mushrooms (optional) and onion; cook 5 minutes over medium heat or until onion is tender, stirring occasionally.
3. Add soup, broccoli, cream chesse and sherry to skillet; cook and stir until hot. Transfer to Crock-Pot slow cooker. Cover; cook on LOW for 1 hour/ Serve chicken and sauce over pasta.


*Tip: Cream cheese can be messy and even difficult to cut into cubes. Try placing it in the freezer for 10 to 15 minutes to make it firmer and easier to cut.
